Trehalose, also known as fenose or fungose, is a non-reducing disaccharide composed of two glucose molecules with the molecular formula C12H22O11.

There are three optical isomers of trehalose: α, α-trehalose (Mushroom Sugar), α, β-trehalose (Neotrehalose) and β, β-trehalose (Isotrehalose). Among them, only α, α-trehalose exists in a free state in nature, that is, commonly referred to as trehalose, which is widely found in various organisms, including bacteria, yeast, fungi and algae and some insects, invertebrates and plants, especially in yeast, bread and beer and other fermented foods and shrimp also contain trehalose. α, β-type and β, β-type are rare in nature, and only small amounts of α, β-type trehalose, α, β-type and β, β-type trehalose are found in honey and royal jelly.
