Galactooligosaccharides (GOS) is a functional oligosaccharide with natural properties. Its molecular structure is generally linked by 1 to 7 galactose groups on galactose or glucose molecules, namely Gal-(Gal) n-GLC /Gal(n is 0-6). In nature, there are trace amounts of GOS in the milk of animals, while there are more GOS in human breast milk. The establishment of bifidobacterium flora in infants largely depends on the GOS component in breast milk.
The sweetness of galactose oligosaccharide is relatively pure, the calorific value is low, the sweetness is 20% to 40% of sucrose, and the moisture is very strong. It has high thermal stability under the condition of neutral pH. After heating at 100℃ for 1h or 120℃ for 30min, galactose oligosaccharide does not decompose. The co-heating of galactose oligosaccharide with protein will cause Maillard reaction, which can be used for the processing of special foods such as bread and pastries
