Calcium gluconate is a kind of organic calcium salt, chemical formula C12H22O14Ca, appearance of white crystalline or granular powder, melting point 201℃ (decomposition), odorless, tasteless, easily soluble in boiling water (20g/100mL), slightly soluble in cold water (3g/100mL, 20℃), insoluble in ethanol or ether and other organic solvents. The aqueous solution is neutral (pH about 6-7). Calcium gluconate is mainly used as food calcium fortifier and nutrient, buffer, curing agent, chelating agent.
